Taco Salad Bowl

Ingredients

Makes 3-4 bowls

For the meat:

1 tsp extra virgin olive oil

½ yellow onion, diced

1 pinch sea salt

1 lb ground beef (or any ground meat)

1 packet taco seasoning (with added water based on package instructions)

 

For the salad:

4-6 c romaine lettuce

1 c cherry tomatoes

2 avocados, diced

½-1 c cheddar cheese, grated

4-6 tbsp sour cream

1-2 c Siete Grain Free Tortilla Chips

Hot sauce

Ranch dressing

Instructions

  1. In a large skillet over medium heat, add 1 tsp. extra virgin olive oil, onions, and a pinch of salt. Saute for 5-7 minutes or until onions are soft.
  2. With your spatula, push the onions to one side of the skillet and add the ground beef, breaking it into small pieces with your spatula.
  3. Once the meat is just about cooked through, add the packet of taco seasoning and water.
  4. Reduce the heat to low and cook for 3-5 minutes or until the liquid is absorbed.
  5. While the meat is cooking, assemble your toppings for the salad.
  6. Add the lettuce to your bowl, then top with the meat mixture and any other toppings of your choice.
